Arachova is the one and during winter is transformed into a bustling little city. This beautiful mountainous village that is known for its breathtaking nature and historical background is situated at the foot of Mount Parnassos in Viotia (the highest mountain in Greece after Mount Olympus), Southern Greece.

The tourism facilities of Arachova, which are fully developed, make it an ideal destination for ski lovers or the ones who are seeking other outdoor facilities, such as snowboard, hiking, and mountain bike or just walking through the cobblestone streets. Furthermore, even if you don’t belong to the adventurous visitor category and you just want to relax in cute cafes and cozy guesthouses, again, Arachova is perfect for you.

At the same time, though, we should not forget that this picturesque village carries interesting history and cultural heritage. Byzantine churches and monasteries hold their own place in Arachova, whilst in really close proximity you will find Delphi, the ancient sanctuary that is recognized by Unesco as a World Heritage Site. In ancient times, Delphi was considered to be by the Greeks the center of the world, the ‘navel of the world’, ‘Omphalos’. Questions were asked to the Oracle Pythia (modern-day Google!) in a will for consultation on crucial decisions. Delphi was also the center of worship of the God Apollo. Delphi is undoubtedly a must-visit while in Arahova.

Arachova also offers traditional Greek food, namely presenting ‘trahana’, a traditional Greek and Cypriot dish, usually found in the villages and is made with either semolina, wheat flour, or cracked wheat and ‘hilopites’, Greek egg pasta. Moreover, it stands out for spoon sweets, yogurt with honey, olives, dry wines, the ‘formaela’ cheese, and grilled meat. You can taste all these in restaurants and taverns, but you can also buy many of the above from local shops. 

Last but not least, you may as well pay a visit to Eptalofos or Agoriani, a charming mountain village that lies at the southern slopes of Mount Parnassus. Its central square is a beauty and there are many options for dining, coffee, and dessert all around. Agoriani is only 11 km far from Parnassus ski center and it's a quiet escape from the bustling Arachova.

Chocolate Truffles Recipe

If you are looking to make a sweet edible treat this Christmas, also ideal as a small gift, try these decadent Sokolatenia Troufakia (chocolate truffles) with dark chocolate, walnuts, and Petit Beurre biscuits. 
 
They can be stored in the refrigerator for over a week, as long as they are in an airtight container. 
 


Ingredients

160g dark chocolate
180g Petit Beurre biscuits
1/2 cup full cream milk
1/3 cup fresh cream
1 tablespoon liqueur
1 & 1/4 cup chopped walnuts

Method 
  • Chop chocolate into small pieces and completely melt over low heat in a double boiler.
  • Place biscuits in a large bowl and crush them into very small pieces. Add a quarter of a cup of chopped walnuts.
  • Pour melted chocolate over biscuits and walnuts and mix together with a wooden spoon.
  • Add milk, fresh cream, and liqueur and mix thoroughly with a wooden spoon until all ingredients are well combined.
  • Cover bowl with cling wrap and place in refrigerator (not freezer) for 1.5 hours.
  • Remove from refrigerator and take a teaspoon of the mixture and begin forming them into ball-like shapes by rolling the mixture in your palms. It makes it easier by wearing food handling gloves, otherwise wet your hands with water in between each truffle.
  • Roll each truffle into the chopped walnuts and place them back in the refrigerator covered tightly until ready to serve.

Delicious Hot Chocolate

Nothing says Christmas like a steaming cup of delicious hot chocolate topped with whipped cream and marshmallows! 
 
Add a fireplace, some cute Christmassy pajamas, and a bit of Mariah Carey and you've got yourself the perfect festive night.
 
 


Ingredients 
  • 480g soy milk
  • 2 - 4 tablespoons granulated sugar
  • 4 tablespoons cocoa powder 
  • 50g chocolate couverture, finely chopped 
To serve
  • whipped cream
  • marshmallows
  • chocolate couverture, melted
  • hazelnut chocolate spread, grated
Execution Method 
  • Heat the milk in a saucepan over medium heat.
  • Pour half of it into a mug. Set aside and keep warm.
  • Add the sugar and cocoa powder to the remaining milk in the saucepan.
  • Heat until it comes to a boil while whisking continuously.
  • Lower heat and cook the mixture for another 2 minutes, until the sugar and cocoa powder have melted and are completely incorporated.
  • Remove from heat. Add the chocolate and stir until it melts.
  • Add the rest of the milk and stir until completely combined. 
  • Serve with whipped cream, marshmallows, melted chocolate, and sprinkle with grated chocolate.

How Christmas Affects Your Brain

Christmas is a time of year like no other; gifts are exchanged, little-spoken-to relatives are contacted, and appetizing treats are consumed with great gusto. Christmas can be both a time of stress and a time of relaxation. But whether you love or hate Christmas it’s pretty difficult to avoid – and so your brain may be altered by the experience one way or another. Here are some of the main facets of the Christmas experience, and how they might affect your brain.

The festive spirit of Christmas

The joy surrounding Christmas may influence some of the chemicals in your brain (dopamine and serotonin) which affect your happiness levels. Dopamine is known to be involved with reward-driven behavior and pleasure-seeking and serotonin are thought to increase our feelings of worth and belonging. So when people talk about “Christmas cheer” they may be on to something.

In fact, researchers at the University of Copenhagen conducted an imaging study to try and find the “centre” of the Christmas spirit in the human brain. Here, participants were shown Christmas-themed images and, in those participants who actively celebrated Christmas, there was increased brain activation in the sensory-motor cortex, the premotor and primary motor cortex, and the parietal lobule. Previously these brain areas have been associated with spirituality, bodily senses, and recognizing facial emotions. While these results should be interpreted with some caution, it is interesting to note the physical effects that feeling festive can exert on your brain.

Stress


Not everyone finds Christmas an entirely joyful and festive time – many people find it very stressful. In fact, the burdens of navigating through a busy shopping centre to find the ideal gift for your other half, or of cooking the perfect turkey for a house full of hungry people, are enough to rattle even the calmest person. Stress can exert a physical response in your body, with the automatic release of adrenaline and cortisol. Further, cortisol has been shown to have a profound effect on the hippocampus, which may decrease your memory and ability to multitask.

Giving gifts

The giving and receiving of gifts is an age-old Christmas tradition and there’s no better feeling than seeing your loved one’s eyes light up when you’ve found the perfect gift for them. But why does giving make us feel so good? Generosity has been linked with the reward circuitry of our brain, causing the release of dopamine and endorphins. Researchers have described a “helpers’ high”, which is experienced after giving. The chemicals that cause this high can reduce stress and increase your desire to repeat these acts of kindness. So, while you may resent being out of pocket after buying your great aunt that pair of slippers, your brain at least ensures that you are compensated with a chemical reward.
