A Culinary Journey Through Latin America

At This is Loco, the menu is a vibrant celebration of Latin American flavors, carefully crafted to honor tradition while embracing innovation. Each dish is a masterpiece, designed to offer an authentic yet contemporary experience. The driving force behind this culinary excellence? Chef Ilias Karakatsanis, a Greek-Honduran talent whose deep-rooted passion for Latin American cuisine is evident in every plate.

Born in Honduras, Ilias was introduced to cooking at a young age out of necessity. His mother suffered a stroke when he was just nine years old, leaving him and his sister to care for her. This challenging situation led to Ilias learning to cook, a skill he quickly fell in love with. After moving to Greece at 16, he decided to pursue his newfound passion, studying at the Le Monde Culinary School and eventually specializing in Latin American cuisine. Ilias blends his Greek roots with Latin flavors, experimenting with unique combinations that bring a fresh twist to traditional dishes.

A Vision Brought to Life

The vision behind This is Loco is as inspiring as its menu. Founded by Athena Skouvaki, a creative entrepreneur who has lived in Sydney and London, the café is a reflection of her global experiences and passion for hospitality. Returning to her childhood neighborhood, she transformed a former car workshop into a welcoming space that blends the past with the present. From the hand-restored mosaic floors to the carefully curated artwork, every detail embodies her dream of creating an inclusive, art-infused culinary haven.

Sporades

Explore the Sporades islands, in the northwest Aegean. You’ll find dense vegetation, rocky landscapes, and pure blue seas; a uniquely alternative destination. Go island-hopping in a paradise island complex. Trace Skiathos walking routes, and discover its hidden beauties. With your mind’s eye follow the footsteps of great writers, such as Alexander Papadiamantis, as they walked through dense forests and olive groves.

Nature enthusiasts should follow a lovely path through the famous Koukounariés forest and around Lake Strofilia (4.2 km). Alternatively, take a leisurely, easy walk round Kanapitsa Peninsula (4.9km).

If you like long walks (7km), why not visit Skiathos’ historical churches—Evagelistrias Monastery & the Churches of St. Harálambos, St. Apóstolos and St. Dimitrios.

The island of Alonissos is home to the Mediterranean Monk Seal (monachus monachus), one of the biggest seal species. You can go to the National Marine Park of Alonissos and support the rescue of newborn pups!

Dinner Tonight: Avgolemono

With some chicken stock in the freezer and a pile of lemons, I set out to see what the hype was about (this recent cloudy weather made it all the more appealing). Some orzo or rice is simmered in the stock until tender, and in the meantime the egg whites are whipped separately, the yolks and lemon juice added, followed by some of the warmed stock.

By throwing the whisk around like a madman, I was able to achieve the soup's unique alchemy: the eggs, rather than stiffening and cooking into a scramble-like mess, turn the soup creamy and rich. It also softens the acidity of the lemon, which leads off the flavor profile, followed by "richness of eggs, salt of chicken [stock], and starch of rice, in that order." This one's going in my regular Winter rotation.

Ingredients

8 cups chicken stock, preferably homemade, if not, low sodium
1 cup orzo pasta, or rice
4 eggs, separated
Juice of 3 lemons
Freshly ground black pepper

Procedure

1 Bring stock to a boil and add orzo or rice. Simmer until tender, about 20 minutes. Season stock to taste with salt, if necessary.

2 When the orzo or rice is nearing tenderness, whisk the egg whites in a separate bowl until medium peaks. Add egg yolks and lemon juice, whisking continuously.

3 When the orzo or rice is finished, transfer 2 cups of the hot stock to the egg/lemon mixture, adding very slowly in a constant stream and beating vigorously to prevent the eggs from solidifying.

4 Take the soup off the heat and add the beaten mixture back into the pot, whisking to incorporate. Serve immediately with freshly ground black pepper.

The Greek Infrastructure, Transport, and Networks Ministry has announced that six regional airports in Greece will receive 197 million euros in EU funding towards their upgrade.

With the goal of boosting EU growth, the European Commission President started the Juncker Plan in 2014 and has since given the airports of Kastoria, Milos, Syros, Naxos, Paros, and Chios funds for modernization and development.

Part of the funds will come from Public Private Partnership and will focus on the design, construction, financing, and management of the airports. Under the supervision of the Civil Aviation Authority, the investors will have the right to use and manage airport facilities.

Greece is the ultimate summer holiday destination, with stunning beaches, Mediterranean cuisine, unique shopping, and incredible experiences. Some places might be more popular than others, from Mykonos to Antiparos to Athens, but below are secret spots where the locals go. Forbes gets the inside scoop on where to go, stay, eat, and what to do in some of the most well-known destinations of Greece.

Athens

Ano Petralona

"Just a hike down Philopappou Hill, Ano Petralona is the neighborhood to be if you want to feel like a local Athenian. The tavernas, bars and restaurants do not only offer some of best affordable menus, but the cocktails and music also make this area a popular destination."

Ilias Lalounis Jewelry Museum

"While the most iconic jewelry house in Greece might be globally praised, the museum — which is housed in the old workshop of the master Ilias Lalounis — is often overlooked when visiting Athens. Under the shadows of the Acropolis, the incredible space is run by Lalaounis’s daughter Ioanna, who is launching a number of initiatives to help cultivate new talent. Call ahead and organize a private tour."

Lake Vouliagmenis

"Lake Vouliagmenis is located along the coast and is the starting point for the stunning drive known as “Limanakia” meaning small ports. Because of its constant warm water temperature and its rich content in hydrogen sulphide, the lake functions as a spa since the end of the 19th century."
